A Nordic Recipe for Valentine’s Day

Happy Valentine’s to you wherever you are in the world. Whether you are in a relationship or single, I hope you show yourself love. I recently read a quote about self-love by Case Kenny that was worth sharing.

“It’s crazy how giving yourself the same love you always give others can change every area of your life.”

Valentine’s Day is usually associated with everything pink, red, and heart-shaped. While these things are cute, you can try something different from the usual heart-shaped cookies. Instead, you can indulge in Ástarpungar, which are Icelandic delicacies similar to doughnuts. These love balls from The Nordic Baking Book by Magnus Nilsson are perfect for a delightful twist on traditional Valentine’s treats.

Ingredients

2 eggs

85g sugar

250g flour

2 tsp baking powder

Pinch of salt

1/2 cup of milk

1 tsp Ground cardamom seeds

Lemon zest

3/4 cup of raisins

Oil for frying

Method

  • Beat the sugar and eggs together until light, white and frothy.
  • In a separate bowl, combine and mix the dry ingredients.
  • Add the other wet ingredients, leaving the add in the egg/sugar mix for last and combine gently.
  • Make small balls using teaspoons or an ice cream scoop and add vegetable oil to a frying pan. (180°c / 356°F).
  • Fry for a couple of minutes or until golden brown.

Baking in Seoul- Carrot & Tangerine Cake- Slowbox Review

YouTube video

Kitchens in most Seoul apartments are VERY dinky. If you are a teacher in Korea (like I am) you will likely have received accommodation from your boss or have received a housing budget.

Either way, most kitchens here do not come with an oven. Most Korean food (not all) is prepared on the gas range or via a fermentation process. So where does that leave us baking lovers?

Soufflé Pancake Craze Comes to Seoul!

Soufflé Pancake Craze Comes to Seoul!

YouTube video

Midday Sun is a pancake, sandwich and coffee cafe run by a very stylish young Korean couple who have experience in coffee shops as well as being able to boast a major in cooking. If you watch the YouTube video in this blog post you’ll know that I was up past midnight looking for places online that would lead me to pancakes and a quirky cafe.

So, what exactly are soufflé pancakes? Think buttery soft, fluffy clouds melting in your mouth. Soufflé pancakes seem like a blend of fluffy American style pancakes and puffy egg whites all whipped together.

Seoul’s Healthiest and Hottest Brunch Spots

I celebrated my final birthday of my twenties last week. It was a festive weekend filled with lots of cake, a ukulele (a surprise gift from somebody special), phone calls, and making wonderful new memories.

A friend offered to treat me to a birthday lunch at a surprise location.  Now, when it comes to offering me good food, you can NEVER go wrong; make it a surprise, and it’s a double winning irresistible combo!  Make it a brunch invite (I’m an owl who really likes to sleep-in over the weekend), and it’s a triple threat!!! My friend picked a healthy brunch stop. (After all that chocolate cake, I needed to put some nutrients into my body!!!)

Dairy Free Lattes in Seoul / Hip New Cafes In Seoul

I have developed an increasingly bad allergy to milk. Whenever I drink milk or eat something with dairy in it, I almost instantly get inflammation in my throat and start coughing… (Which is not exactly what you want to happen whilst on a coffee date ) So, I wish I could say I have completely cut dairy out of my life, however, I have drastically cut back on my dairy consumption. I no longer buy milk for my home fridge and I try as often as possible to order non dairy latte options when visiting a cafe. (My usual order being an espresso, a black americano or a latte)

There are two things that you will never have to search for in Seoul, rice and soy. However, trying to find dairy free milk options is somewhat more diffcult to naviagte. Rice is a staple in the Korean diet but rice milk has not quite caught on yet. Soy milk however is everywhere!!! Soy milk in Korean is called  ‘duyu’ (두유).

Vegan Cafes In Seoul – Pyeongsangshi 평상시

Choco Mint Cupcakes (topped with coconut cream frosting)

Why would anybody want to eat vegan cake if it tastes like cardboard? Well…. that was my misconception with regards to vegan-baked goodies. I have tried to cut out dairy and eggs from my baking as both are making me feel gross…. So I found myself trying out some vegan recipes. It’s taken me a good few tries to find workable substitutes for things like eggs, butter etc. but every now and then I get it right!!
