Healthy Christmas Pumpkin Pancakes

Ingredients:

1 Cup spelt four
1 Cup millet flour
1 Teaspoon baking powder
1 Teaspoon guar gum

1 Egg
Two tablespoons melted b

utter
500 grams mashed pumpkin
2 Tablespoons honey

2 Tablespoons of milk (you can add more or less depending on your batter consistency)

Method:

  1. Mix all dry ingredients together in a bowl
  2. Mash the cooked pumpkin in a separate bowl
  3. Add all the ingredients together and mix
  4. Heat butter in a pan and blob a tablespoon of batter per pancake in to the pan (frying until golden brown)
  5. Sprinkle with cinnamon and a drizzle of honey.
